“Mr. Lyan” Serves Up Sustainability at His London Cocktail Bars

You won't find ice, citrus or fresh fruit at Ryan “Mr. Lyan” Chetiyawardana’s bar White Lyan, but head to his other London-based bar, Dandelyan, and you'll see ingredients like pine cordial, cedar sap and kombu apple brandy mixed with mint stem-syrups, egg yolk-advocaat and spent tea-tinctures.
