There’s Not One But Two Fillings in the Cheese Course-Inspired Ravioli at Dario

Two fillings is better than one, at least that’s the philosophy of the ravioli at Chef/Co-Owner Joe Rolle’s Dario in Minneapolis. Before opening in the winter of 2024, Rolle came across the doppio shape while researching his future pasta program. At first glance, it looks like a simple rectangular pasta pocket, but upon closer inspection the doppio has a seam down the middle that separates two distinct fillings.
