Pelligrino list of World's Best Restaurants, but Chef/Owner Enrique Olvera still found time to chat with Plate Managing Editor Liz Grossman from the upstairs kitchen of his acclaimed Mexico City restaurant. The chef opened up about why he loves Mexican cuisine, the insects that've shown up on his menu and the one celebrity he's dying to get into his restaurant.
