Eggplant, Not Apple, Delivers the Fall Flavors in This Not-So-Classic Pie

Anthony Le didn’t particularly like eating eggplant, but on a day when no apples arrived at his former restaurant but a surplus of Thai eggplants did, the chef made a discovery: the raw eggplant had a similar earthy flavor and texture as apples but without the sweet notes.
