At the 4-month-old, plant-based, Mexican street food-inspired Don Bucio’s Taqueria, jackfruit stars in barbacoa, legumes and root vegetables bump the pork in al pastor, and mushrooms mimic beef in asada tacos. And when it comes to elotes, “we wanted to do our best to make it as close as we could to the non-vegan version of the staple street food,” says Chef/Owner Rodolfo Cuadros.
