Sometimes inspiration can strike when you least expect it. For David Cáceres, who co-owns San Antonio bakery La Panadería with his brother David, it hit around 2AM, just hours before the opening of the farmer’s market. “My brother asked me to bake some almond croissants,” he recalls. “I was checking my notes and realized the recipe I had involved adding rum to the almond paste.”
