While Philly’s got its cheesesteaks, Springfield’s got its horseshoe. This open-faced, French fry-strewn behemoth is a classic in downstate Illinois, and is on the menu at Chicago’s DMK Burger Bar. “Our version has a grass-fed beef patty, brioche toast, sea salt, black pepper fries and ‘special’ sauce,” says Michael Kornick, who features the fork-and-knife sandwich on his late-night menu.
