Broccoli Salads Take Menus from Winter to Spring

With a few more weeks still to go before spring produce arrives in earnest, vegetables like broccoli are helping bridge the gap between seasons on menus. A recent crop of broccoli salads around the country proves the versatility of the vegetable, which can be roasted, grilled, or charred before being mixed with salami, trout roe, coriander vinaigrette or other ingredients for a new-school broccoli salad that goes well beyond the mayo-laden versions of the past.
