When you’re talking about Filipino food, sooner or later you’re going to drop the f-bomb. It just happens: You start explaining the roots of adobo and pancit, all the countries that influence Filipino cuisine, the ingredients used by the Visayan and Tagalog people, and you can’t help but say it: fusion. I try to avoid saying the word (chalk it up to post-traumatic stress over its misuse in the ’90s) but will make an exception here....
