Scotch Bonnets Bring the Heat to Caribbean Kitchens

Scotch bonnet peppers might be named for the Scottish Tam o’ Shanter hat, but their sweet-tempered heat is something straight out of the Caribbean. Legend says eating Scotch bonnets helps protect the stomach from problems and helps ward off ghosts, but their place in the Caribbean kitchen is indisputable.
