A Traditional Israeli Street Food Inspired This Shawarma-Meets-Foie-Gras

Foie gras, says Lior Lev Sercarz, has an unexpected history in Israeli cuisine—one that he mined for shafoie, the bombastic shawarma-meets-foie-gras he serves at his Spice Brothers in New York City’s East Village. “The inspiration for the shafoie came from a traditional [but now rare] Israeli street dish, which put grilled foie gras in a pita,” he says.
