This Smoked Asparagus Salad Wins Spring

 

We've seen asparagus a few dozen different ways so far this spring, but at Philadelphia's Supper, Mitch Prensky is taking it further in a salad that packs a punch.

Inspired by asparagus sushi rolls, he gently smokes blanched spears, then combines them with pieces of crispy salmon skin, pickled blueberries, miso mustard and toasted savory oat crumbles. It's savory, salty, smoky, tart and sweet, all at once - the perfect palate-warmer at the beginning of a spring dinner.
