Coconut Stands in for Seafood in this Vegan Ceviche

You’ll usually find snapper, halibut, shrimp or lobster in ceviche; maybe conch if you are somewhere tropical. But at Vivo Café on the western shore of Grand Cayman, guests are given a vegan option with the restaurant’s coconut ceviche.
