Jacques Gautier Talks Eating, Cooking and Composting in Brooklyn

Earlier this week we reported that the Bloomberg administratration has plans to impose mandatory composting for New York City residents and restaurants in the coming years, but Brooklyn chef Jacques Gautier is already prepared.
