What Food Says The Philippines to You and Why?

The dish that embodies the Philippines to me is sinigang, which is a soup made with pork, beef, chicken, fish or shrimp. The souring agent can be from tamarind, guava or kamias, which is a sour fruit from the Philippines with the crunch of star apple. My mom always made her sinigang especially tart and with lots of daikon. — Kristine Subido, Highflier Provisions, Chicago
