As I walked into Elements, Scott Anderson’s fine-dining restaurant in Princeton, N.J., I paused to watch a server cross the dining room, bearing in his arms a giant contraption that looked like a bird’s nest had somehow gotten tangled up with an enormous sea urchin. 

Game on. This was going to be fun.
