Chefs to Watch 2017: Mason Hereford, Turkey and the Wolf, New Orleans

The tables along the back wall at New Orleans’ Turkey and the Wolf are set close together, so it was easy for the two guys to our left to lean over and survey our bologna sandwich, collard green melt, wedge salad and headcheese taco.

“Have you tried this taco?” we asked them.

They hadn’t, but they loved their herb-y tomato and mayo sandwich with sunflower seeds.
