Texas-born, Madison, Wis.-based chef Jonny Hunter has a propensity for keeping things on the down-low. The chef got his start in 2000, serving $2 vegetarian meals from a church-basement coffee shop on the UW-Madison campus called the Catacombs until “the church realized we weren’t a religious organization,” he recalls.
