Jose Alarcon Shares How He’s Making the Shift From Fine Dining to Fast-Casual

When the pandemic forced Minneapolis chef Jose Alarcon to close his live-fire, fine dining Mexican restaurant, Popol Vuh, he and business partner Jami Olson decided to open a fast-casual restaurant and food market called Vivir in the Popol Vuh space, next to his taqueria, Centro. He spoke with Plate about how he’s shifting the menu and space to fit in the new dining environment.
