Comal Heritage Food Incubator Helps Immigrants and Refugees Set Down Roots

Olivia Marcano grew up eating pabellón criollo, a beloved dish of shredded beef, black beans, rice, and fried plantains in her native Venezuela. Four years after coming to the United States, she’s putting it on the menu at Comal Heritage Food Incubator in Denver, Colo.
