Fabio Trabocchi is a long way from home, but every plate he puts out connects back to his childhood in Italy’s Marche region. His wow-worthy Italian fare is sophisticated and satisfying, forged with age-old techniques and hyper-fresh seasonal ingredients. An artful eye for plating—flower-dappled burrata, a bowl of pancetta-laced pasta carbonara finished off with a sunny-side up duck egg—makes his work almost too beautiful to eat. Almost.
