Maybe it’s me. Maybe it’s the political climate. Maybe it’s the scenario of the vocal minority, but I’m still hearing conversations and seeing comments pitting wild-caught vs. farmed-raised seafood. I believe this seafood infighting is increasingly hurting the ability for chefs to serve seafood at all because it adds a lot of confusion for customers in an already confusing food category.
