Salt

Freshly Ground Black Pepper

Sherry Vinegar

Heat a film of canola oil over high heat until shimmering. Add sweet potato leaves and sear for about 15 seconds, then sauté. Season with salt, pepper and vinegar. Transfer to a paper towel and reserve until needed.
