Shiitake and smoked Swiss Dutch baby
To make 1 pancake, preheat oven to 450 degrees F. Melt 1 tablespoon butter in an 8-inch sauté pan and allow to brown. Ladle in 6 ounces of pancake batter and cook briefly (45 seconds) over medium heat. Put pan in oven for 4 minutes, or until pancake is puffy and lightly golden brown.
Remove pancake and top with 1/3 cup cooked shiitakes and just less than 1/3 cup Swiss. Return to oven and bake 1 to 2 more minutes, or until cheese is melted.
Transfer pancake to a plate and top with a few shavings of fennel. Mix radishes, shallots and shoots in a bowl with vinegar and oil and season lightly with salt and pepper. Scatter salad over pancake and drizzle mustards seeds around. Repeat for more pancakes.
