Star anise

Add water and shiitake to a pot and bring water to a boil. Once boiling, lower heat and add tea.

Let simmer for 10 minutes. Strain, then mix in pomegranate molasses. Chill.

Serve 2 ounces in a Burgundy wine glass, smoked with star anise.
