1 tbs, plus as needed

1/2 tsp, plus as needed
Freshly Ground Black Pepper

Cut bacon or salt pork into small pieces and brown in large flat-bottomed pot. Pour coffee into pan containing bacon pieces and grease. Bring to a simmer and add salt, pepper and red pepper flakes. In a separate container, make a slurry with water and cornstarch and blend until clump-free (if clumpy, pour through a chinois to remove clumps). Pour slurry into pot, stirring until gravy thickens. Add salt and pepper to taste if needed. Increase or decrease thickness by adding water or stock to gravy.
