Place mushrooms in bottom of a 4-inch half hotel pan. Pour just enough pickling liquid over them to cover by half. Remove all trays from a chamber vacuum machine and place mushroom pan, uncovered, in chamber. Vacuum on high 3 times. Remove pan from vacuum machine and transfer all contents into a blender. Blend on high until smooth. Transfer to a container and reserve until needed.
