Peaches, Large, Ripe, Pitted and Roughly Chopped
White Onion, Medium, Roughly Chopped
Freshly Ground Black Pepper
Preheat oven to 400 degrees F. In a half hotel pan, toss chopped peach, onion, olive oil and salt and pepper. Spread evenly across pan. Cover mixture in thyme sprigs and tightly wrap with aluminum foil. Roast in oven until onion is soft, about 45 minutes. Remove and discard thyme sprigs. Blend mixture in a high-speed blender until very smooth. Pass through a tamis and reserve until needed.
