Castelvetrano olives, pitted

c
Piquillo peppers, jarred
2
tbs
Extra-virgin olive oil
As needed
Salt
As needed
Freshly ground black pepper

Prepare a medium-hot grill. Place olives in a grill basket and place directly over embers. Grill, stirring olives with tongs occasionally, until they are charred in places, about 2 minutes. Let cool completely, then roughly chop and set aside. Remove seeds and dice peppers. In a mixing bowl, combine peppers, olives and olive oil. Season to taste with salt and pepper; reserve until needed.
