Calamari, Sliced (Tubes and Tentacles)
Celery Bunch, Sliced on the Bias Into 1-Inch Pieces

Heat hot sauce on medium to high heat for approximately 10 minutes. Whisk in sugar quickly so it dissolves without scorching. Add butter and whisk to homogenize.
Dredge calamari in flour. Fry calamari in 375-degree F oil until light golden brown. Season the calamari lightly with salt.
Place 8 ounces calamari in bowl and drizzle with 3 to 4 ounces hot sauce. Garnish with 1 stalk celery, chopped, and 1 1/2 ounces blue cheese. Serve immediately.
