Managing the Shoemaker
Ever wondered where the term “shoemaker” comes from? If you’re not familiar, it’s a term usually applied to cooks or chefs who either don’t care and/or have little or no integrity. A shoemaker is the guy who doesn’t clean his station, uses bad product and never preps enough for service. I have worked with quite a few over the years.
