A Parisian Winter Salad Gets Better With Bonito

After heading to Lyon last week to witness Team USA historically take home the Gold at the Bocuse D’or (watch for our coverage of the event in a long-form web piece early March), we were elated and energized, and, well, also pleasantly full of local fare like pistachio-flecked pâté en croûte, Lyonnaise salad glistening with meaty chunks of bacon and thick slabs of rabbit terrine.
