Carrots Hint of Spring at Detroit’s Republic Tavern

Ahhh … winter vegetables. We love that deeply roasted brussels sprouts, cauliflower and rutabaga are everywhere, and that they are substantial enough to appease winter palates. But sometimes, winter veggies need to lighten up. Not everything roasted for winter eating needs to be doused with fish sauce or drowned in muhammara or something else that obscures the flavors of the vegetable itself.
