A lot has happened since we started working on our Dietary Requests issue. Along with the closures of restaurants and bars in the wake of COVID-19 went the ability to serve any guests, let alone diners with special dietary requests. Our goal for the issue was to highlight the hospitality and innovation being shown by chefs in the face of these rising requests—how they were working to make a place at the table for everyone. The recipes below, along with the others in this issue—whether vegetarian, vegan, gluten-free, or Paleo—show that hospitality in action. Here's hoping we'll be at the table together again soon.
