Eggplant Stars in Turkish, Israeli, and Italian Applications
Eggplants will be popping up at the markets soon, and we've rounded up some ways to use the summer vegetable. Deep fry eggplant rounds, then cure them with garlic, vinegar, and red pepper flakes, or tuck them into a sabich sandwich with hard-boiled eggs, tomato, cucumber, pickles, mint and basil. Try a burnt eggplant puree to accent figs and olives, or make an eggplant and potato risotto and serve it with other nightshade applications like pickled mushrooms.
