Daven Wardynski has been busy since he becoming executive chef of the Omni Amelia Island Plantation Resort in Florida three years ago. When he’s not overseeing the property’s nine restaurants, sourcing honey from onsite bee colonies or managing the Sprouting Project (which includes an aquaponics greenhouse, gardens and a fruit tree orchard), he’s foraging for sea beans, chanterelles and wood sorrel.
