Add Summer Squash to Soup, Succotash, and Creamed Rice
We love the mild flavor of summer squash, and the vegetable works well in a variety of applications. Make a summer squash soup and accent it with Asian carp and salmon roe, or grill summer squash and serve it with harissa-marinated chicken. You can also use the squash in stuffed peppers with quinoa, add it to creamed rice with country ham, or mix it with corn, mushrooms, and other vegetables for a summer succotash.
