Smoked Tomato Halves

Plum Tomatoes, Ripe, Cored and Peeled
Extra-Virgin Olive Oil
Garlic Cloves, Smashed
Cut tomatoes in half lengthwise to expose seed pockets. Remove seeds by gently scraping and squeezing. You should be left with just flesh of tomato. Place on a wire rack and cold smoke in smoker or grill for 1 hour. Place smoked tomato halves, salt, olive oil, garlic and rosemary into a bowl and toss to combine. Place on a sheet pan in a single layer and slow roast in a preheated 250-degree F oven until concentrated and slightly caramelized around edges, 1 to 2 hours. Once cool, remove garlic and rosemary and reserve tomatoes until needed.
