Pork Loin, Trimmed and Cleaned

Preheat circulator to 135 degrees F. In a small bowl, combine dry items. Liberally rub pork loin with spice mixture until thoroughly coated. Seal on high pressure in a vacuum bag and cook in water bath for 90 minutes. Remove and chill in ice bath. Portion into desired portions and reserve until needed.
