Chill serving bowls in freezer before serving. Sprinkle a teaspoon of buckwheat crumble in base of bowl. Follow with 2 spoonfuls (about 2 tablespoons) granita. Place a large scoop of ice cream in center of bowl, covering granita and crumble.

Using a flat metal surface (bottom of a milk-foaming pitcher or base of a 1-cup measure works well), flatten scoop into a smooth, round disc. Finish with dots of fig leaf oil and serve immediately.
