Fennel, Very Thinly Shaved
Cilantro, Fresh, Finely Chopped
Pineapple Vinaigrette (See Note)
Combine fennel and cilantro in a bowl, then toss with vinaigrette. Reserve until needed.
To make vinaigrette, make pineapple vinegar by infusing pineapple cores into rice wine vinegar, then add equal part rice bran oil.
