Caramel raisin sauce
. Bring water to a boil, then remove from heat and add raisins; let raisins soften. Blend raisins in a high-powered blender until smooth. Meanwhile, cook sugar in a saucepan, mixing with a fork if needed, until caramel in color. Deglaze with 2 tablespoons soy milk. Add caramel to blender with raisins and add remaining soy milk; blend until smooth and strain through a fine-screened tamis. Cool in an ice bath and reserve until needed.
