Beets glazed in prawn heads with spicy flowers

Prawn heads and shells

Beets, medium to large

Fire up a wood oven and cook something in it, including prawn heads and shells (to be used for glaze).

The next day, when fire has died out, put medium to large beets on hearth and leave until outside is totally burned and inside is very soft. Remove from oven and wrap to allow beets to steam. Place in refrigerator and let chill overnight.

Place roasted prawn heads and shells in a pot, add just enough water to cover, and simmer until flavor is extracted from heads. Strain heads and shells and continue to reduce until mixture is consistency of a sticky glaze.

Peel off burnt exterior of beets.

Light grill, place beets on grill and gently cook them.

When warmed through, glaze them in prawn glaze. Remove from grill and garnish with spicy flowers.
