“Everything Bagel” Churros

White Sesame Seeds
In a large pot combine water, poppyseeds, sesame seeds, onion, sugar, salt and butter. Bring to a simmer. Once butter has melted, add flour and cook over low heat until it forms a dough and begins to pull away from sides of pot. Remove from pot and let cool to room temperature. Place in standing mixer fitted with paddle attachment.
Mix on medium speed, adding 1 egg at a time. Once all eggs have been emulsified, place in piping bag with star tip and reserve until needed.
Just before serving, pipe out and deep-fry 3 1/2-inch churros (2 per serving) in deep fryer. Fry until golden brown, then toss in spice mixture.
