Chefs to Watch 2015: Michael Fojtasek & Grae Nonas, Olamaie, Austin

Like many chefs, Michael Fojtasek has a long lineage of cooks in his family. His mother, Olamaie, taught him kitchen basics, like how to make the perfect fried green tomato, a technique she learned from her own mother, also named Olamaie. In fact, his great-grandmother and great-great-grandmother all share the same first name. So when it came time for Fojtasek to name his restaurant in Austin, the answer was simple.
