Bell Peppers Give Cocktails A Little Garden Variety

Vegetable cocktails have been around for a while, and we love a good minted pea mojito. But while peas, tomatoes and even beets have found their way into everything from bloody Marys to margaritas, bell peppers haven’t landed a spot behind the bar until now. Bartenders are finding ways to tap into the vegetal flavors of peppers to add layers of flavor to everything from mezcal and tequila to gin and rye.
